First opened in 1872 the Auberge des Blancs is newly rebuilt, its cuisine reproducing an authentic range of family dishes that three generations of women chefs – revered as mères cuisinières – prepared and served for three generations before Georges Blanc arrived on the scene. Chequered tablecloths, red quarry tiles, everything here is authentic in the spirit of great country cuisine with emblematic dishes such as "Quenelle mousseline de Brochet, Nantua sauce", "Dombes-style sauteed fresh frogs legs", "traditional Bresse chicken with “Mère Blanc” sauce", and “Gâteau Grand-Mère à l’orange”.
