It is this very freshness, this lively, rich and earthy fragrance, that fills Stéphane Derbord's thoughtful cuisine: Burgundy snails, Bresse chicken and floating islands with gingerbread. His restaurant is a convivial place in the heart of Dijon. The wine cellar is of course Burgundian, and as welcoming as Isabelle's smile as you arrive, with a fine selection of other wines from elsewhere in France and Navarre.
