Guests are greeted by the impressive volumes and clean, bold lines of a wonderful 13th century chapel lined with stout stone pillars, adorned with sculpted keystones and laid with period parquet flooring. Graced by a succession of prestigious chefs, this restaurant enjoys an excellent reputation. Its current culinary star is Eric Sampietro, whose "respectful boldness" successfully charts the waters between great classics and contemporary creations. In this legendary restaurant, your mouth waters at the mere mention of pan-fried foie gras, cod fillet and, as is only fitting in Gascony, Armagnac emulsion.
