He had been dreaming about it. He did it. By jumping in there and starting his own business. That was a real challenge for David Rathgeber who took over "L'Assiette", a neighbourhood institution briskly managed by Lucette Rousseau. It was a fawless move for the bristro-specialised Chef boasting 12 years work with Alain Ducasse. What he really likes are those timeless household recipes spiced up by his roguish spirit. So he revels to his heart's content in this former charcuterie now turned into a bistro chic. As a delicacy virtuoso, he offers recipes from his native Auvergne, which he has reworked with true sensitivity. His cuisine has a soul, so the customers want more.
