Between Castelnaudary and Toulouse, Nathalie and Gérald Garcia maintain this balance at their superb 11th century Cathar castle. You have a choice of guest rooms in the chateau, tastefully renovated and offering contemporary decor, or one of the restored rooms in the presbytery, which has retained its historic authenticity and offers a mix of modern and timeless with its garden and swimming pool overlooking the Lauragais Valley. Similarly, Gérald's gourmet cuisine is inventive and his desserts a designer delight.
